Scones with cream and jam

Am slowly picking up the momentum to start baking since we moved, but a few times they didn't come out 'good enough' to be on the blog, and most of the times I was lazy.

So long time ago when I was in UK, I used to buy a bag of scones from Sainsbury and eat it all on my own, plain. Then, I didn't know about cream and jam being the famous companions for scones. Never mind, now I have found my new love.

To make 10

1.5 cup Self Raising Flour
40g Butter
2 tsp Castor Sugar
3/4 cup milk
Some raisins (optional)

1. Sift flour into a bowl.
2. Use the fingertips, rub butter into flour until mixture resembles breadbrumbs.
3. Make a well and add milk. Mix with a flat-bladded knife until the mixture forms a soft dough, turn onto a slightly floured surface, knead gently (minimise the kneading as the more you knead, the tougher the scones will become).
4. Pat dough to 2cm thick. Cut or press using a round glass.
5. Place scones onto dusted baking tray. Sprinkle top with plain flour (very important because I love my scones with lots of flour on top).
6. Bake for 20 minutes, at 200 Celcius.

As the usual baking rules, always preheat the oven!

Beach 4th Times

We have been to Mona Vale for 4 times, practice makes prefect, so with all the proper preparation this time; snacks, baby food, picnic rug, picnic umbrella, cold box, Xn's sandcastle tools, sunscreen, and potty, we had a really good time.

Must show beach picture for beach post

Xn's sand castle that her father helped build

Found these tiny baby shells and so I have a new hobby now. I like!

Baby Shells

Two curious boys asked why I am picking up the tiny shells instead of the big beautiful 'better' one. To stop them from asking more questions later I changed the topic and asked if I can take a picture of their boat.

Boy's boat

Last picture, me, my shadow.

Ugly shitty face

Xn had her porridge at the beach and we adult had our lunch at Chatswood's Westfield. I must have had some shitty food because I cannot remember what I ate.

Oh, dimsum!

Bubur Cha Cha

We have a small kitchen but it totally belongs to me. I was the youngest girl at home and I didn't really have the chance to cook at home, when I got married I stayed with my husband's parents and again, we were served good food so I didn't have the initiative to cook. I did bake a little whenever I feel like it. That was all of my achievement in the area of the kitchen.

Since we moved to Sydney in May, I have whipped out a lot of Asian foods that I crave for. Every time I made something new, my confidence level leaps!

I made Bubur Cha Cha for the Christmas Party at Lilian's and I made it again today because I have potatoes and yam left in the fridge.

Bubur Cha-Cha Recipe (Credit to Nyoya Food)

Ingredients:

Half of a medium Purple Sweet Potato
Half of a medium Orange Sweet Potato
Half of a medium Yam (Taro)
10g Sago (Tapioca pearls)
50g Black-eye beans (soaked for 1 hour)

Tapioca flour jelly

50g Tapioca Flour
1/4 cup Boiling Water
Food coloring

Coconut Milk Base

1.5 liter water
1 cup Thick coconut milk
Sugar to taste
1 or 2 Banana (peeled and cut half inches thick)
2 Pandan leaves
Salt to taste

Method:

1) In boiling water, boil black-eye peas until soft. Boil sago separately, until translucent and cooked.
2) Peel and cut all potatoes and taro into cubes or desired shapes. Steam, separately, until cooked.
3) To make tapioca flour jelly, place the flour in mixing bowl. Pour in boiling water. Mix the flour and water until well
incorporated. When the dough is cool, roll it out evenly on a well floured surface and cut into cube or desired shapes. Boil a pot of water and cook until all float.
4) Bring a pot of water, add in 1 table spoon sugar, pour in banana and boil for 5 minutes. Drain and set aside.
5) In boiling water (1.5 liters), add in thick coconut milk, sugar, salt, pandan leaves and cook over low heat about 10–20 minutes.
5) Pour in all the ingredients, together with the sago, tapioca jelly into coconut milk base and mix well.

Will have more recipes up for my own record.

After about 4 months

I remember opening an account with blogger but have forgotten and am too lazy to find out the URL. Now looking back at the date, it took me 4 months to move my lazy ass to start a real post. I want to start blogging because I want to record my thoughts (I am 30 and very forgetful), I need a place to rant and complain. Wait I also want to store my recipes. I am always very lucky to find good recipes from the internet but always too lazy to save it so most of the good food is only cooked once. What a waste.

Oh, this is also the place to record the growth of my daughter, but I am not sure to publish any of our private pictures. Let's see.

Wah now I can call myself a blogger?

Below is an entry that I forgot to post. It was written on the day I created this blog.

***
I think I'm so creative to come up with the name of the blog. If I would list down some random names for my husband to guess, he would know this is what I came up with. Because, he is my only friend. No, I have two, the other is Olivia, but she is too young to understand or read a blog. I do not feel sorry that I have no friends, I am too lazy to maintain a relationship, I am a heartless human I barely need any of your friendliness.

I am trying to write as friendly as possible, as positive as possible, as cheerful as possible to mask off the darkness and cold in me. I am such a cold cold person I almost hate myself to be like this, but i still have so much prides beneath, because in the end, I believe I am a good person.

The reason I start a blog because I am listening to Taylor Swift and I am so high I have to express my feelings and remember I have NO friends to talk to?

And now I got to run, picking up Olivia in the city. I miss her so much. We have never been separated for more than 2 hours in this 3 month.
